James has over 18 years working in the hospitality Industry. Originally from Chester, James spent his early career working in Pubs and country house hotels around Cheshire.

In his early 20’s James moved to London to further his career, working at the 3 Michelin star “Restaurant Gordon Ramsay”. After nearly 3 years of working in this high-pressure kitchen James moved on, spending a short time at Michelin starred Juniper in Altrincham, subsequently returning to London to again join Gordon for two years as sous chef at Claridges.

In 2005 James took on the role of head chef at Maze working alongside Jason Atherton. In the first year of operation, Maze won numerous awards including a Michelin star. James was nominated and won the prestigious Caterer & Hotelkeeper Acorn award for young achievers. In 2008 James was made executive chef of both Maze and the newly opened Maze Grill overseeing both restaurants.

In 2010 James left Maze to pursue his ambition of opening his own restaurant temporarily working as a Private Chef whilst looking for the perfect site.  In 2012 James with his wife Louise and father Michael opened The Plough Inn in Longparish, Hampshire.

In the first year of operation, The Plough Inn won the Good Food Guide ‘UK Pub of the Year Award’ along with a Michelin Bib Gourmand and two AA rosettes. The Plough has been in the Budweiser Budvar Top 50 Gastro Pub awards for three consecutive years and in January 2013 James was awarded the Gastro Pub Chef of the Year Award. The Plough Inn has recently been placed 17th in The Good Food Guide Top 50 Pubs in the UK and in January 2015 the plough inn was Ranked number 4 in the UK top 50 Gastropub Awards this years highest climber.

In 2014 James appeared on BBC2 Great British Menu, Winning the Main course and going on to cook this at the banquet in St Paul’s Cathedral for 60 D-Day veterans, VIPs and celebrities.
